  • 6 Yukon Gold potatoes
  • 2 German sausages
  • 1/2 of a yellow onion, diced
  • 2 strips bacon, diced tiny
  • 1/4 pound of Gruyere
  • butter
  • Instructions:
  • Boil potatoes for about 30 minutes until fork tender
  • cool potatoes in refrigerator. Can prepare hours in advance.
  • preheat oven to 375
  • in a pan, cook bacon, then dice. Save bacon grease
  • dice onion
  • peel and shred potatoes (can use food processor for this)
  • In a large bowl, mix potatoes, onion, bacon, salt, and half of shredded cheese
  • In a small cast iron skillet, melt 1-2 tbsp butter and add bacon grease. Swirl to coat sides of pan.
  • Add potato etc. mix onto hot butter
  • Make room for sausage and cover with potatoes.
  • Cook in oven for at least 30 minutes+.
  • Cover with extra cheese and put under broiler until there's lots of brown bits.
