6 Yukon Gold potatoes
2 German sausages
1/2 of a yellow onion, diced
2 strips bacon, diced tiny
1/4 pound of Gruyere
butter
Instructions:
Boil potatoes for about 30 minutes until fork tender
cool potatoes in refrigerator. Can prepare hours in advance.
preheat oven to 375
in a pan, cook bacon, then dice. Save bacon grease
dice onion
peel and shred potatoes (can use food processor for this)
In a large bowl, mix potatoes, onion, bacon, salt, and half of shredded cheese
In a small cast iron skillet, melt 1-2 tbsp butter and add bacon grease. Swirl to coat sides of pan.
Add potato etc. mix onto hot butter
Make room for sausage and cover with potatoes.
Cook in oven for at least 30 minutes+.
Cover with extra cheese and put under broiler until there's lots of brown bits.
