Corn and black bean salsa
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained or equivalent frozen, rinsed
  • 1 bell pepper
  • 1/2 red onion
  • 1 lime
  • Splash of Balsamic vinegar
  • +/- 1 tsp Cumin
  • Salt and pepper
  • Instructions:
  • Dice onion and bell pepper
  • In a large bowl, combine black beans, corn, bell pepper, and onion
  • Add zest and juice of 1 lime
  • Add a slash or two of balsamic vinegar
  • Add cumin, salt and pepper to taste
