German Potato Salad
  • 6 Medium Potatoes (Russet, white, or mixed)
  • 6 Slices of Bacon (More if potatos are large)
  • 3/4 Cup Chopped Onion
  • 2 Tablespoons Flour
  • 3 to 4 Tablespoons Sugar
  • 1 1/2 teaspoons Salt
  • Pepper
  • 3/4 Cup Cider Vinegar
  • 1/4 Cup Water
  • Instructions:
  • Boil potatoes and peel once cool enough to handle. Set aside.
  • Fry bacon until crisp. Remove from skillet.
  • Saute onions in bacon fat until soft and slightly brown. Stir in Flour, sugar and salt until a paste forms.
  • Add vinegar and water and stir until smooth and bubbly.
  • Pour sauce over potatoes and crumble bacon over top.
