German Potato Salad
6 Medium Potatoes (Russet, white, or mixed)
6 Slices of Bacon (More if potatos are large)
3/4 Cup Chopped Onion
2 Tablespoons Flour
3 to 4 Tablespoons Sugar
1 1/2 teaspoons Salt
Pepper
3/4 Cup Cider Vinegar
1/4 Cup Water
Instructions:
Boil potatoes and peel once cool enough to handle. Set aside.
Fry bacon until crisp. Remove from skillet.
Saute onions in bacon fat until soft and slightly brown. Stir in Flour, sugar and salt until a paste forms.
Add vinegar and water and stir until smooth and bubbly.
Pour sauce over potatoes and crumble bacon over top.
