Sheet Pan Honey Garlic Chicken and Veggies
3 Tbsp Olive Oil, Divided
2 Tbsp Unsalted Butter, melted
2 Tbsp Honey
2 Tbsp Brown Sugar
1 Tbsp Dijon
3 Cloves Garlic, minced
1/2 Tsp Dried Oregano
1/2 tsp Dried Basil
Salt and Pepper
16 oz baby red potatoes, halved
4 boneless, skinless Chicken Breasts
24 oz Broccoli Florets
Instructions:
Preheat oven to 400.
Lightly oil a baking sheet.
Whisk together olive oil (2 Tbsp), butter, honey, brown sugar, dijon, garlic, oregano, basil, salt and pepper.
Place potatoes in a single layer on the baking sheet. Drizzle with olive oil and season with salt and pepper.
Top with chicken in a single layer, and brush each chicken breast with honey mixture. Use all the mixture.
Bake in oven until chicken is 165 (~25 minutes).
Add broccoli during last 15 minutes of cooking time, then broil for 2-3 minutes or until yummy.
