Spinach & Artichoke Dip (mostly from Alton Brown's recipe of Good Eats)
1 package (10 oz) thawed, chopped frozen spinach
1 can (~12 oz) chopped artichoke hearts
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
a lot of red pepper flakes
a medium amount of garlic powder shakes
a few shakes of salt
Defrost frozen spinach in a bowl in the microwave. Drain in strainer and then put back in the bowl. Add the cream cheese and microwave for a few seconds to soften it. Drain and cut the artichoke hearts into small pieces. Add to bowl with spinach and cream cheese. Add sour cream, mayo, and Parmesan. Mix thoroughly. Add as the red pepper flakes, garlic powder, and salt as desired for taste. Best enjoyed slightly warm with tortilla chips (we like Mission brand the best :) ).
